Llywelyn’s Pub Barrel Aged Night Beer Menu

· Goose Island Bourbon County Stout

Brewed in honor of the 1000th batch at our original Clybourn brewpub. A liquid as dark and dense as a black hole with thick foam the color of a bourbon barrel. The nose is an intense mix of charred oak, chocolate, vanilla, caramel and smoke. One sip has more flavor than your average case of beer. ABV 14.5%

· Great Divide Rumble

An American IPA with subtle nuance. Brewed with heavy handed additions of Pacific Northwest hops, this beer is gently aged on French and American oak resulting in a wonderful balance of bitterness, caramel sweetness, vanilla, and undertones of pine and citrus. Very inspiring  ABV 7.1%

· New Holland Dragons Milk

Dragon’s Milk Ale, is the crown jewel of New Holland Brewing Company. It is the unrivaled result of painstaking processes – both creative and scientific. Roasty malt character intermingled with deep vanilla tones, all dancing in an oak bath. Pairings: red meat, smoked foods, balsamic, rich cheese & dark chocolate.  ABV 10%

· Schlafly Imperial Reserve Stout

Schlaflys’ Bourbon Barrel Aged Imperial Stout is complex and strong, with rich chocolate and roasty flavors.  The beer is brewed to have big malt flavor and hop bitterness to balance the sweetness of the high alcohol content.  After primary fermentation and conditioning, the beer is transferred to freshly-emptied bourbon barrels and aged for several months before being carbonated and bottled. ABV 10.5%

· Harviestoun Ola Dub 12

Ola Dubh (or ‘Black Oil’) is a collaboration between Harviestoun Brewery and Highland Park, Distiller of the Year*. It is based on Harviestoun’s award-winning Old Engine Oil. With more than a stylistic nod to the classic Imperial Porters (and Stouts) of the nineteenth century, this deliciously rich, dark, 8% a.b.v. beer is the first ale to be aged in malt whisky casks from a named distillery and, with traceable casks and numbered bottles, the rest with genuine provenance. Ola Dubh will initially be available in three different expressions; the initial release will be of small batches aged in casks formerly used to mature Highland Park 12 Year Old, Highland Park 16 Year Old and Highland Park 30 Year Old. Further variants are planned for the future. Ola Dubh is, in the words of beer afficionado Owen D.L. Barstow: “The most interesting new British beer I have tried in years.” ABV: 8%

· New Holland Oak Aged White Hatter

Mad Hatter aged in Kentucky barrels. Round, smooth wood character brings a new dimension to dry-hopped, aromatic hoppiness.  Mad Hatter - Is insanely dry hopped with Centennial Hops. This pale copper colored ale has a flowery hop aroma and a bold hop bitterness. Hop Heads Only Please! ABV: 7.1%

· North Coast Old Rasputin  XV

Seems hard to believe that we’ve been making Old Rasputin for 10 years now, but that’s what’s happened. And, to celebrate the occasion, we’ve brewed a special small batch that’s been aged for 9 months in some 12 year-old bourbon barrels. It’s bottled in 500 ml bottles with a cork and wired finish and a special commemorative label ---- and it’s amazing. The depth, intensity and complexity of the flavor profile make it a worthy tribute to this fine beer. ABV: 11.5%

· Stone Woot Stout

Stone Brewing Co’s Founder Greg Koch, Founder Drew Curtis, and Actor/Home brewer Wil Wheaton have teamed up for the next Stone collaboration. The aptly named Stone Farking Wheaton w00tstout features an imperial stout brewed with pecans, wheat & rye, partially aged in bourbon barrels. ABV: 13%

· 4 Hands Volume 1

Volume #1 is our first release in the Wood Series, an ongoing series focusing on high gravity ales aged in American spirit barrels. Volume #1 is an Imperial Stout with cocoa nibs and a single origin coffee aged in American whisky barrels of 16 months. Volume #1 pours pitch black with aromas of bourbon, coffee, and rich dark chocolate. ABV: 10.5%

· Deschutes Black Butte 25

Dates, figs and chocolate. Black currants, barrel-aged in bourbon casks. The result is an Imperial Porter with a tart berry and chocolate aroma with luscious layers of dried fruit, oak and vanilla. A fitting tribute to the 25th Anniversary of our flagship beer.      ABV: 11.3%

· Llywelyn’s Prince in Exile  aged in our Knob Creek Barrel

Comes black with a small tan head. Aroma of roasted malt, chocolate, and spice. Taste is roasted malt, dark chocolate, spice, and alcohol. Aged in a bourbon barrel to intensify the sweetness and smoky flavor of the bourbon. ABV: unknown

· Six Row Sour Barrel Aged Export Stout

Roasted barley, coffee, and dark fruit dominate the aroma of this high-gravity version of the traditional dry stout. Originally brewed for tropical markets, the Foreign Extra Stout is easy drinking due to its light body and dry finish. Don’t let the pitch-black color fool you; this is truly a “session” ale good for any season. ABV: 5.9%

· Six Row Sour Barrel Aged Double IPA

Pours clear golden with only a small white ring for a head. The aroma has sourness, fruitiness and mild vinegar. It has a light clean body with a minor amount of carbonation. The flavor begins with lots of malt, some sourness, earthy / grassy hops and fruitiness. The finish has oak and astringency  ABV 8.4%
