Llywelyn’s Pub Barrel Aged Night Beer Menu

 Goose Island Bourbon County Stout

Brewed in honor of the 1000th batch at our original Clybourn brewpub. A liquid as dark and dense as a black hole with thick foam the color of a bourbon barrel. The nose is an intense mix of charred oak, chocolate, vanilla, cara- mel and smoke. One sip has more flavor than your average case of beer.

 Great Divide Oaked-Aged Yeti

Yeti Imperial Stout’s sophisticated sibling. They may be from the same clan, but they have entirely different per- sonalities. Oak aging gives a subtle vanilla character, rounding out Yeti’s intense roastiness and huge hoppy na- ture. ABV 9.5%

 Perennial Barrel-Aged 17

Imperial Mint Chocolate Stout aged in Rye barrels for 14 months. While the description is somewhat simple, the complexity of the beer speaks for itself! ABV 11.5%

 Schlafly Imperial Reserve Stout

Schlaflys’ Bourbon Barrel Aged Imperial Stout is complex and strong, with rich chocolate and roasty flavors. The beer is brewed to have big malt flavor and hop bitterness to balance the sweetness of the high alcohol content. After primary fermenta- tion and conditioning, the beer is transferred to freshly-emptied bourbon barrels and aged for several months. ABV 10.5%

 Humboldt Black Xantus

This Imperial Stout is infused with fair-trade, organic coffee from a local roaster, Jobella, and aged for 6 months in a combination of Bourbon, retired Firestone Union and wine barrels. Black Xantus packs a powerful punch. ABV: 11%

 New Holland Oak Aged White Hatter

Mad Hatter aged in Kentucky barrels. Round, smooth wood character brings a new dimension to dry-hopped, aromatic hoppi- ness. Mad Hatter - Is insanely dry hopped with Centennial Hops. This pale copper colored ale has a flowery hop aroma and a bold hop bitterness. Hop Heads Only Please! ABV: 7.22%

 Deschutes Mirror Mirror

Mirror Mirror, born of a double batch of Mirror Pond Pale Ale, is an inspired barley wine ale layered with intri- guing nuances. Explore this latest incarnation and enjoy its delicious complexity in every sip. ABV: 11.2%

 Stone IRS aged in Templeton Rye Whiskey Barrels

This massive and intensely aromatic beer abounds with notes of anise, black currants, coffee, and roastiness, and its heavy palate is nothing to be trifled with! Now, match that with the complexity of Templeton Rye—Whata treat! ABV: 12.7%

 4 Hands Volume 2

Volume #2 is the second release in the Wood Series, an ongoing series focusing on high gravity ales aged in American spirit barrels. Volume #2 is an old ale in American whisky barrels. The character of the whiskey blends beautifully with a strong malt base. The resulting beer is full-bodied, combining rich caramel sweetness, with robust Bourbon intensity. ABV: 9.4%

 Deschutes Black Butte XXVI

Our 26th anniversary Imperial Porter was aged in bourbon barrels and dry spiced with Theo Chocolate's cocoa nibs, revealing hints of vanilla and chocolate. Pomegranate molasses and Oregon cranberries complement the ro- bust flavor with a hint of fruit and just enough tart to make you smile. ABV: 10.8%

 Llywelyn’s Prince in Exile aged in our Knob Creek Barrel

Comes black with a small tan head. Aroma of roasted malt, chocolate, and spice. Taste is roasted malt, dark chocolate, spice, and alcohol. Aged in a bourbon barrel to intensify the sweetness and smoky flavor of the bourbon. ABV: 12%

 Widmer Bros. Reserve Vanilla Barrel-Aged Brrrbon

Brewers added fresh whole vanilla beans to a few select barrels of our barrel aged brrrbon '13. For this limited edition brew, the addition of vanilla beans heightens the vanilla character imparted by the barrels, and adds a deli- cious layer of complexity to the beer's oak and caramel character. ABV: 10.7%

 Great Divide Espresso Oaked-Aged Yeti

A generous infusion of Denver’s own Pablo’s espresso adds yet another layer of complexity to this beer, combin- ing with the vanilla oak character, intense roasty maltiness and bold hop profile to create a whole new breed of mythical creature. ABV: 9.5%

What we’ve got here is an imperial stout brewed with a massive amount of coffee and chocolates, then cave-agedin oak bourbon barrels for an entire year to make sure wonderful bourbon undertones come through in the finish. Makes your taste buds squeal with delight.

 Stone Tiger Cub

Steve Gonzalez, Research and Small Batch Manager at Stone Brewing Co.— “Brewmaster Mitch Steele asked me to brew a saison so I came up with a recipe that had herbal notes from the noble hops, citrus, and a hint of pepper from the Grains of Para- dise. When the question of what to name the beer came up, I suggested Tiger Cub. Tiger Cub was my nickname for my wife Jenn. I had told her that I would name a really special beer after her someday, but she passed away before I could do so. When the opportunity to name the beer presented itself I though this saison, something she would have liked, would be the perfect opportunity to make good on my promise.” Aged in white wine barrels ABV 7.7%

 Goose Island Bourbon County Barleywine

Aged in the third-use barrels that were once home to Kentucky bourbon and then our renowned Bourbon County Stout, this traditional English-style barleywine possesses the subtlety of flavor that only comes from a barrel that’s gone through many seasons of ritual care. The intricacies of the previous barrel denizens – oak, charcoal, hints of tobacco and vanilla, and that signature bourbon heat – are all present in this beer. Hearty and complex, Bourbon County Brand Barleywine is a titan and a timeline; a bold, flavorful journey through the craft of barrel aging. ABV 12.1%

 Deschutes Not the Stoic

Aged and sequestered in select oak casks. The result – a contemplatively brewed quad created in homage to all those who doubted the original. This unrepentant rendition is definitively Not The Stoic. ABV 12.1%

 4 Hands Barrel-Aged Bona fide

Goshen Coffee. Bona Fide is our Russian Imperial Stout brewed with a single origin Goshen Coffee and vanilla beans. This single project was aged in a Buffalo Trace Bourbon Barrel for 11 months. Aromas of whisky, coffee and vanilla dominate ABV: 10%

 Founders Backwoods Bastard

Expect lovely, warm smells of single malt scotch, oaky bourbon barrels, smoke, sweet caramel and roasted malts, a bit of earthy spice, and a scintilla of dark fruit. It’s a kick-back sipper made to excite the palate. ABV: 10.2%

 Deschutes Abyss

A deep, dark Imperial Stout, The Abyss has almost immeasurable depth and complexity. Hints of molasses, lico- rice and other alluring flavors make it something not just to quaff, but contemplate. ABV: 11%

 Cathedral Square Ave Maria

Double Abbey Ale aged in Elijah Craig bourbon barrels. French, Morello, Cherries are added to each barrel creat- ing a hint of sin that will have you asking for the intercession on the Virgin Mary. ABV: 9%

 Firestone-Walker Stickee Monkey

A Belgian Quad by recipe, but aging it in spirits barrels garners its own category: Central Coast Quad. A beer for- mulated to sit on the sweeter and malty side so that we could utilize it for blending. Turbinado brown sugar from Mexico and Belgian candi sugar add wonderful molasses flavors. It has a full body and lush texture with barrel expression all over this beer: toasted oak, coconut, leather and cigar tobacco. ABV: 13.4%

 Boulevard Smokestack Rye on Rye

A rich, tawny rye ale, then mellow it in the warmth of charred oak rye whiskey casks? Two kinds of malted rye provide spicy sweetness, giving way to notes of caramelized wood and the citrusy tang of Citra and Ahtanum hops before easing into a dry, lingering finish. ABV: 12%

 Charleville Flanders Red

In the tradition of the west Flanders region of Belgium. A Red that has been sitting in the barrels for two years now. Racked on cherries, this one is not to be missed! ABV: 5.6%

 Left Hand Oak-Aged Widdershins

This English-style barleywine pours burnished copper with a bone colored head. The aromas will wind you up with upfront scents of oak, earthy hops, and caramel with an afterthought of peat. ABV: 10.7%
